Greek Salad Sandwich

What You Need

  • 4 slices Sara Lee® Oven Roasted Chicken Breast.
  • 2 oz feta cheese; sliced thin.
  • 2¼ inch thick slices crusty Italian bread.
  • 2 slices tomato; sliced thin.
  • 2 slices cucumber; thinly cut on a bias.
  • 1 cup romaine lettuce.
  • 1 tbsp kalamata olives.
  • 3 tbsp olive oil.
  • ¾ tbsp fresh lemon juice.
  • 2 tsp fresh oregano.
  • 1 tsp red wine vinegar.
  • ¼ tsp garlic; minced.
  • To taste Cracked black pepper.
  • To taste Salt.

How to Make It

  1. Whisk together olive oil, lemon juice, vinegar, oregano and garlic in a small bowl.
  2. Season to taste with salt and pepper.
  3. Toss lettuce and cucumbers in dressing.
  4. Layer feta, lettuce, kalamata olives, turkey, cucumbers and tomatoes on one slice of bread.
  5. Top with remaining slice of bread.
