Herbed Cream Cheese & Chicken Finger Sandwiches

What You Need

  • 2 slices Sara Lee® Oven Roasted Chicken Breast.
  • 2 slices white bread; lightly flattened.
  • 1 tsp light herbed cream cheese.
  • 4-6 slices English cucumber; sliced thin.
  • 4-6 slices red onion.
  • 3 tbsp rice wine vinegar.

How to Make It

  1. Place red onions in small bowl and cover with rice wine vinegar.
  2. Let sit for 15 minutes.
  3. To make your own herbed cream cheese, combine 1 tbsp light cream cheese, ¾ tsp chopped chives, white pepper and salt to taste.
  4. Spread cream cheese on one slice of bread.
  5. Top with layer of chicken, cucumbers and pickled onions.
  6. Top with remaining slice of bread.
  7. Trim crusts and cut into thirds.
