What You Need

  • 2 slices Sara Lee® Oven Roasted Chicken Breast
  • 1 slice Tuscan bread; grilled
  • 3-4 stalks asparagus
  • 1 egg; poached
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp mayonnaise
  • ¼ tsp minced garlic
  • 1-2 tsp parmesan cheese
  • 1 tsp white wine vinegar
  • Kosher salt
  • Fresh cracked black pepper

How to Make It

  1. Preheat oven to 400 degrees.
  2. Place asparagus on baking sheet in single layer, drizzle with olive oil and season with salt and pepper.
  3. Roast for 7-10 minutes until tender.
  4. Combine mayonnaise and garlic in a small bowl.
  5. Spread garlic mayonnaise on grilled bread.
  6. Layer chicken and asparagus on bread.
  7. Top with poached egg and season with salt and pepper.
  8. Sprinkle with parmesan cheese and serve.
