Pasta with Roast Beef & Asparagus

What You Need

  • 1 cup Sara Lee® Angus Medium Roast Beef; cut ¾-inch thick and diced
  • 1 cup asparagus; blanched and chopped into 1-inch long pieces
  • 2 cups dried farfalle pasta
  • ½ cup blue cheese; crumbled
  • 2 tbsp cream cheese
  • 2 tbsp unsalted butter
  • Salt
  • Pepper

How to Make It

  1. Cook pasta in salted, boiling water until al dente.
  2. Drain, reserving 2 tbsp cooking liquid.
  3. To thin sauce, add a little bit of cooking liquid or whole milk.
  4. Return pasta to pan and add blue cheese, cream cheese and butter; stir until melted.
  5. Add roast beef and asparagus and cook until warmed through.
  6. Serve immediately.
