Smokey Black Bean & Turkey Quesadilla

What You Need

  • 4 slices Sara Lee® Hardwood Smoked Turkey Breast.
  • 1 cup freshly shredded Sara Lee® Monterey Jack Cheese.
  • 2 flour tortillas.
  • ¼ cup canned, seasoned black beans; drained.
  • ¼ cup sour cream.
  • ¼ tsp adobo sauce.
  • 2 chipotle peppers; minced* (note chipotle peppers are found in adobo sauce).
  • 1½ tbsp butter.

How to Make It

  1. Combine sour cream, minced chipotle peppers and adobo sauce in a small bowl.
  2. Mash black beans with a fork in a small bowl or place in a food processor until a paste forms, about 30-45 seconds.
  3. Melt half of butter in frying pan over medium-high heat.
  4. Place one tortilla in pan and cook until golden brown and remove from pan.
  5. Spread black bean dip on the side of the tortilla that was face-up.
  6. Melt remaining butter in frying pan and place other tortilla in pan.
  7. Top with cheese, ham and first tortilla, with black bean spread face down.
  8. Lower heat to medium and cook until cheese is melted, approximately 7-10 minutes.
  9. Cut in to four pieces and serve immediately with sour cream.
