Zesty Harvest Quinoa Salad

What You Need

  • 2-3 slices Sara Lee® Oven Roasted Turkey Breast; cut 1/4 inch thick and medium dice
  • 1 cup red apple (Gala, Honeycrisp or Braeburn); medium dice
  • 2 cups red quinoa; cooked
  • ½ cup walnuts; toasted and roughly chopped
  • ¼ cup green onions; chopped
  • ¾ tbsp lemon zest

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp lemon juice
  • 2 tsp honey
  • 1 tsp lemon zest
  • ½ tsp garlic; grated
  • ½ tsp sherry vinegar
  • salt
  • pepper

How to Make It

  1. Combine all of the dressing ingredients except olive oil, salt and pepper in a medium bowl.
  2. While whisking, add olive oil in a steady stream until emulsified.
  3. Season to taste with salt and pepper.
  4. Set aside.
  5. Combine remaining ingredients in a medium bowl.
  6. Drizzle with dressing and stir to combine.
