Zesty Quinoa & Turkey SALAD

What you Need

2 1/2-3 oz.
Sara LeeĀ® Oven Roasted Turkey Breast, cubed
2 cups
red quinoa, cooked
1 cup
red apple, diced
1/2 cup
walnuts, toasted & roughly chopped
1/4 cup
green onions, chopped
3/4 tbsp.
lemon zest

How to Make It

STEP 1
Combine all of the dressing ingredients except olive oil, salt and pepper in a medium bowl.
STEP 2
While whisking, add olive oil in a steady stream until emulsified.
STEP 3
Season to taste with salt and pepper.
STEP 4
Set aside.
STEP 5
Combine remaining ingredients in a medium bowl.
STEP 6
Drizzle with dressing and stir to combine.

Dressing

  • 1/4 cup of extra virgin olive oil
  • 2 tbsp. of apple cider vinegar
  • 2 tbsp. of lemon juice
  • 2 tsp. of honey
  • 1 tsp. of lemon zest
  • 1/2 tsp. of garlic, grated
  • 1/2 tsp. sherry vinegar
  • salt and pepper, to taste
