Topped with sliced Sara Lee® Oven Roasted Turkey Breast, avocado, chopped bacon, and blue cheese crumbles, this Cobb Salad Avocado Toast is full of fresh and bold flavors for lunchtime or anytime!

I love a unique avocado toast recipe. So simple to whip up and you can add fresh, seasonal ingredients to your liking. It’s an easy way to enjoy whole foods for breakfast, lunch, or a snack. I’m always looking for quick & easy recipes that fit into my busy life. Avocado toast is a super simple meal that I can make in minutes and feel good about eating.

Cobb salad is one of my all-time favorite dishes to order at a restaurant, and I knew the ingredients would be delicious on toast. I love to put a new twist on the classics.

Cobb Salad Avocado Toast
PREP TIME 10 minutes
TOTAL TIME 10 minutes

Ingredients

  • 2 slices, multi-grain toast
  • 1 avocado, scooped
  • 4 slices, Sara Lee® Oven Roasted Turkey Breast
  • 1 hard-boiled egg, sliced
  • 2 slices, chopped, cooked bacon (can also use pre-cooked bacon)
  • 2 cherry tomatoes, chopped
  • 2 Tablespoons, blue cheese crumbles, divided between the slices of toast

Instructions

Top each toast slice with smashed avocado spread, 2 slices Sara Lee® Oven Roasted Turkey Breast, hard-boiled egg, chopped bacon, cherry tomatoes, and blue cheese crumbles.
 
Start by mashing an avocado slice on a piece of bread. That’s your base. Top with Sara Lee® Oven Roasted Turkey Breast and pick your Cobb Salad toppings from there!

I love chopped bacon, cherry tomatoes, crumbled blue cheese, and finishing it off with a sprinkle of chopped green onions. So much flavor! Don’t you just want to dig in?
